Chili Cookoff and Cupcakes!

Tonight is the chili cook-off and my chili is currently sitting in a crock pot waiting to go. It smells so good! I am doing these posts a little out of order but I made this chili to test it out a week ago and its quite good. Now I just need to get some pics up. I will be sure to post pictures tonight of the chili cook off and the kids in all their costumes!

Since I know there will lots of yummy goodness tonight and to help myself avoid temptation, I borrowed a recipe from Karina from Gluten Free Goddess and tweaked it a little. Instead of coffee in the cupcakes and the icing, I just used more chocolate 🙂 Now I DO have pictures for that! These are gluten free, sugar free (I used Stevia) cupcakes, icing included. I think I will mess with the recipe a bit, these seemed a little too heavy and I’d like to lighten them up a bit. I know I’ll have cupcake cravings in the future!

Jumping back on the bandwagon!

I hate that for the last several months it’s been day to day with the food. Never really going to the grocery store for one big purchase, no meal planning. Ugh! So time to jump back into it!

Tomorrow the hubby gets paid and that means I need to come up with a food list for the next 2.5 weeks and buy it ALL tomorrow. Budget? $150 for three people.

When we lived in Virginia I started buying food every two weeks and discovered I saved a TON of money. Way more than if I did it every week. I also rarely used my entire budget, it was much more like 70 bucks for 2 weeks – which is pretty amazing 🙂 Part of the low dollar amount could be because I hate buying junk food. I feel like its a huge waste of money. Don’t get me wrong, I love junk food! But I usually stare at the potential product, weighing the yummy taste against its cost and end up not getting it or figuring I can make way more for less at home.

That’s the other thing – home cooking saves you a ton of money and is so much healthier for you – even if what you are making is full of sugar and cheese!…Much healthier than the processed store stuff. I don’t want to make it sound like I never buy stuff at the store, I do. I just try not too.

Also, I am still working with this candida diet and finding what works best for me. I’ll be having tests soon to determine if gluten, soy, casein, dairy (which I already know) or anything else is a problem for me. My stomach really has never felt better. My head feels clearer. I can wake up without headaches. It’s great and completely worth not eating donuts – almost. After I come up with the next couple weeks food plan, I will be sure to share it here with any original recipes. I’ve been forced to get creative so there’s a lot more of me in these recipes than usual.

Anti-Candida Diet

I’ve been faced with a rather interesting challenge and have needed to truly take stock of my diet and just what kind of vegetarian I am. Okay, I’ll admit it, I’m a junk food vegetarian. I love comfort foods and snacks – I love foods as part of a routine – and apparently that is what has gotten me into this mess.

I went to the allergist the other day and made a discovery. Aside form being allergic to pretty much every plant I was pricked with and a few animals, I am allergic to molds. One mold/yeast in particular is causing me trouble – candida.

I have been dealing with a lot of health issues over the last couple years, mostly sinus issues and colds but I couldn’t figure out what was causing it. When I found out I was allergic to dust and dust mites, I did what I could to alleviate the situation but I still didn’t get any better. Well with the main culprit being candida and me continuing to eat sugar and all kinds of unhealthy and fermented foods, no wonder I’m not feeling so great!

I don’t mean to sound like a complete junkie – I do try to eat right, I just happen to eat more than my fair share of donuts and wheat thins. Now I am on the anti-candida diet. Basically I have to starve the candida of what it feeds on – sugar – and anything else than can supply it to my body – fermented foods and other things you wouldn’t expect. I also now get to be gluten free! Oh yay…I mean geez.

This has been really tough the last couple of days but I am trying to figure it out. My sweet tooth is mad at me and the halloween candy at the store just about made me cry. I love my candy corn. They don’t sell that in the summer!

I have a large list of foods I can eat and which I can’t. It’s a little bit of a challenge trying to stay veg, find things for me to eat and feed my family things I can’t. I’ll try to update with menus or interesting sites I’ve come across. I’m not sure how long I’ll be doing this for but I know it’s going to be more than a few months.
